Can you bake on a Big Green Egg?

The short answer is yes, and cornbread is a great testing ground for your first baking session on the Big Green Egg. You can bake not only cornbread but also just about anything. We love cooking pizza on the Big Green Egg.

Cornbread is a great companion to pulled pork sandwiches. We love cooking it right after smoking pork shoulder – the grill is hovering at 250°F, and can quickly get to 350°F while you are preparing your mix. It works so well for a couple of reasons: 1) the pork shoulder needs to rest 2) the grill is already hot 3) the smoke adds a tremendous, but not overwhelming flavor to your cornbread mix.

What’s the best cornbread mix?

You can use just about any box recipe for this – or you can whip a batch up from scratch. From our experience we’ve had great results bringing the temperature up to bake on the Big Green Egg. For example going from 250°F to 350°F. One thing to note, if you’re going down from say 450°F to 350°F, there is a good chance that you end up burning the bottom of the cornbread. We recommend using the Big Green Egg as an oven when you come to temperature or when you bring it up from a lower temperature to the baking temp.

When making Big Green Egg Cornbread, we used the cornbread mix from Whole Foods. You can also buy this online via Amazon. We tend to use what we have in the house, but this affordable cornbread mix has never disappointed us. We cook ours in a traditional baking pan, but this also works great using a cast iron skillet.

  • 1 9×9 inch baking pan
  • 1 Mixing bowl

Ingredients

  • 1 box 365 Cornbread & Muffin Mix
  • 2 Eggs
  • 1 cup Milk
  • 1/2 cup Vegetable Oil

Instructions

  • Preheat the Big Green Egg to 350°F using the convEggtor heat shield
  • Stir together eggs, milk, and vegetable oil by hand until smooth
  • Pour mix into the 9×9 inch baking pan
  • Bake at the center of the grill for 30-35 minutes
  • Bake until golden brown, or a toothpick comes out clean

Notes

For Big Green Egg corn muffins use a muffin pan. Grease each cup, or use baking cups. Fill each approximately 2/3 full. Bake for 15-18 minutes on the Big Green Egg until golden brown. This recipe makes about 18 muffins.

The biggest tip we have when baking on the Big Green Egg is either to set the temperature according to the recipe, or come up from low temperature, like after smoking pork or brisket. If you come down from a hot temperature, you risk burning your cornbread or other baked goods.

Once you set the temperature, you must mix up your cornbread batter and put it into a baking dish. We like to use parchment paper to avoid sticking, but butter or lard will also work well.
