  • Pre-Heat Big Green Egg with ConvEggtor to 400°F
  • Allow 30 minutes for your roast to come to room temperature
  • Generously apply garlic salt to all sides of the rib roast
  • Place in BGE for 15 minutes at 400°F
  • Lower grill temp to 350°F and cook for 2 hours

Once the rib roast has been cooked to temperature. It’s time to take it off the grill and allow it to rest. Let the rib roast rest for at least 15 minutes.

One tip we always recommend is to pull the roast before it has the exact cooking temperature. That is because the rib roast will continue to cook as it rests. So if you’re shooting for a perfect medium rare, if you pull it too soon it’s possible that it overcooks, and you wind up having a medium roast.

After it’s sufficiently rested, it is time to slice and serve. Before serving, we like to finish the roast with some coarse sea salt, or if we’re looking to add some extra pop, we’ll add smoked sea salt, to give it a little extra smokey flavor. Enjoy!
