  • 1 Big Green Egg
  • 1 ConvEggtor
  • 1 9x9 inch baking pan
  • 1 Mixing bowl
  • 1 Measuring Cup

Ingredients

  • 1 box 365 Cornbread & Muffin Mix
  • 2 Eggs
  • 1 cup Milk
  • 1/2 cup Vegetable Oil

Instructions

  • Preheat the Big Green Egg to 350°F using the convEggtor heat shield
  • Stir together eggs, milk, and vegetable oil by hand until smooth
  • Pour mix into the 9x9 inch baking pan
  • Bake at the center of the grill for 30-35 minutes
  • Bake until golden brown, or a toothpick comes out clean

Notes

For Big Green Egg corn muffins use a muffin pan. Grease each cup, or use baking cups. Fill each approximately 2/3 full. Bake for 15-18 minutes on the Big Green Egg until golden brown. This recipe makes about 18 muffins.
