Bisquick Zucchini Squares
When it’s summer and your garden is overflowing with zucchini (summer squash), you may be looking for new zucchini recipes! You’ve already added it to stir fry, grilled it, made a ratatouille. Have you ever tried baked zucchini squares?
Below we share our favorite Bisquick baked zucchini square recipe straight from our Nonna’s recipe book. The zucchini squares can be cooked in as little as one hour. This easy to bake dish can be prepared as an appetizer, side dish, and is also great as leftovers. This recipe can be served both warm out of the oven, or also cold/room temperature.
Zucchini Squares Recipe without Bisquick
One question we often get is, how do I make zucchini squares without Bisquick? If you’re running short on Bisquick, don’t fret! You can simply replace the Bisquick with flour, butter, salt, and baking powder. Simply use 1 cup flour, 1.5 oz butter, 1/2 teaspoon salt and 1.5 teaspoons baking powder. Combine ingredients and use in place of the Bisquick. We recommend using Bisquick out of pure convenience, but the recipe will come out great either way.
Baked Zucchini Squares
Equipment
- 1 Glass Pan
- 1 Garlic Press
- 1 Measuring Cup
Ingredients
- 3 Cups Zucchini (approx. 2 zucchinis)
- 1/2 Cup Onion
- 1 Clove Garlic
- 1 Bunch Parsley
- 1 Cup Bisquick
- 1/2 Cup Grated Parmesan Cheese
- 1/2 Cup Vegetable Oil
- Salt & Pepper
Instructions
- Chop the zucchini, onion, mince garlic, and chop parsley
- Beat four eggs
- Combine all ingredients, except for the zucchini
- Add the zucchini last
- Spray glass baking pan with non-stick cooking spray
- Evenly distribute mixture across baking pan
- Bake for 40 minutes at 400°F
- Let cool, and slice into squares to serve
